Sweet Chilli Crispy Wings

Ingredients:
400g Chicken Wings
1/2 tsp Salt
1/2 tsp Ground Black Pepper
1 tsp grated Fresh Ginger
4 Garlic Cloves, crushed
125g Cornflour
3 large Red Chilli, de-seeded & cut into 1/4
60ml Light Soy
120ml Runny Honey
1tbsp Rice Wine Vinegar
1tbsp Sugar
1tbsp Sesame seeds
Vegetable Oil
Instructions:
Chicken Preparation - Cut the tips off each wing and then cut each wing in half. Put the chicken into a large bowl and mix with the salt, pepper and ginger. Add the cornflour to a separate large bowl, then thoroughly coat each chicken wing. Then put the wings aside.
The Sauce - Heat a wok over a medium to high heat. Add 1-2 tablespoons of oil, then fry the garlic and chillies make sure you don’t burn the garlic. After 30 seconds add the soy sauce, honey and vinegar, mix well and simmer for a couple of minutes. Add the palm sugar and stir until fully dissolved. Remove from the heat and set aside.
Cooking the Chicken - Put enough vegetable oil in a large saucepan to deep fry the wings (submerge them). Fry the wings in batches of 5-10 for 8-10 minutes. Turn them frequently to ensure even cooking. Remove wings and drain them and do this until all wings are cooked.
Once wings are cooked fry the wings for another 10-12 minutes until golden brown and crispy, remember to turn the wings frequently. Remove and drain on rack and repeat with rest of wings.
Serving Up - When all chicken has been double fried reheat the sauce in wok and add the wings. Mix well to coat and then transfer to the plate and sprinkle with the sesame seeds. Enjoy :)
